You're right that the haunt doesn't specify how many heroes a tentacle may grab, so I suppose the way you played it is correct.

Whenever a tentacle Tip is defeated (regardless of whose attack it is), it drops any explorer it has grabbed, becomes stunned, and retreats to the room where its Root is.
