I can't say much about the difficulty. We didn't lose a game before June and only lost two games in general.
Maybe you're already doing this, but I'd advise doing everything you can to not end anywhere that's vulnerable. We almost always ended our turns on Havens. Like at least 95% of the time, we made sure we got back to a Haven.
Extending the board is worth it, because at the same time that there are fewer supplies to distribute, there are more cities to be pulled from the infection deck, which means the chances of any one place being pulled are much lower.
Definitely review journal entries. If you have anything that references longitude or latitude, you can reference the board with the coordinates.
Also, searches. Do them.
It's still the same game. Remember what the game is, but adapt your play style to new challenges.
