yes, the point of flipping the monster token to the "S" side is that on their next turn all they can do is flip back to the regular side. Basically, stunning them causes them to miss a turn. Any other monsters (and the Traitor) that weren't stunned can act as normal.
Unless the Haunt says otherwise (and quite a few do), attacking them while they are stunned is quite pointless, so any arguments about whether you can or not are also pointless.
