I'd personally recommend overall doijg the minimum you're comfortable with in terms of adjustments and just accepting mistakes happen. Maybe that's adjusting scores, maybe you also redo any end-of game steps from the last game with revised results. I wouldn't recommend playing a replacement game, although the overall design is probably resilient enough it wouldn't actually hurt.
In my campaign, one of our players accidently swapped his hand of cards with either a large set he dealt off the at-the-time small deck when using a particular game mechanic, or possibly even with the deck itself! We just played on, with the appropriate level of correction for the mistake being simply ribbing him about it for the rest of the campaign.
