A defender revealing first signifies that the card chosen is indeed the one he intended to play. If attacker revealed first, the defender could claim he wanted to play a defense but was not given a chance or missunderstood the situation.
Basically what would happen is "I am attacking, do you defend. Defender mumbles something or puts a card down, attacker reveals. Defender claims he didn't confirm that was the card he wanted to defend with. Arguments break out."
